I campi occupavano 398’800 ha (38%). Tra le altre superfici coltive (38’200 ha, 4%), la vigna occupava 13’400 ettari e i frutteti 7’000 ettari. Le varie colture si sono sviluppate in maniera diversa nel 2019. Le superfici coltivate a grano (73’600 ha), stabili negli ultimi anni, sono diminuite del 2,8%. Quelle di barbabietole da zucchero si sono ridotte ancora di 1’000 ha, attestandosi nel 2019 a 17’600 ha. Dopo vari anni di espansione, nel 2019 le superfici coltivate a ortaggi hanno presentato una contrazione (11’900 ha, -2,1%), mentre le colture di girasoli hanno registrato una progressione (5’900 ha, +9,6%). Particolarmente apprezzate l’avena (1’700 ha, +5,2%) e il farro (5’700 ha, +6%). Alcune colture di nicchia, quali il miglio, il sorgo, la canapa e le lenticchie hanno guadagnato terreno. Nel 2019 la produzione biologica, ormai una costante nell’agricoltura svizzera, concerne il 16% dei terreni. In particolare, il 21% dell’orticoltura, il 29% delle leguminose e il 10% delle vigne sono coltivate secondo i metodi della produzione biologica.
